HOT SPOT: ROJO MEXICAN BISTRO, PARTRIDGE CREEK
The biggest of the colorful spots that serve chef Luis Garza’s authentic Mexican dishes gets capacity crowds on Friday and Saturday evenings, when the approximately 70 tables turn three times before the last chimichanga is served. From the moment the free-standing building opened — with its eye-popping red-prism chandeliers, swooping panels of fabric overhead, and Diego Rivera-esque murals of workers harvesting agave and making tequila — fans of Mexican fare began pouring in.
