Plymouth-based restaurant Nico & Vali Italian Eatery has a passion for “fresh, simple, and home-cooked” food. This summer, it shares the recipe for its Lemon Shrimp, a dish of sauteed shrimp with spinach, heirloom tomato, garlic, and white wine.
Nico & Vali Italian Eatery’s Lemon Shrimp Recipe
3 Tbsp. extra virgin olive oil
5-7 raw shrimp, peeled and deveined
¼-½ cup fresh heirloom tomato, medium dice
½ cup fresh spinach
1 ½ tsp. garlic, minced
1 ½ tsp. lemon juice
1 oz. white wine
Heat olive oil in sauté pan until sizzling hot and sear shrimp. Add garlic and tomato until lightly toasted. Deglaze pan with white wine. Add lemon juice and spinach and toss to wilt spinach. Plate and serve hot.
