With Green Dot Stables a genuine hit, foodies could hardly wait for Jacques and Christine Driscoll’s next brainstorm, and they’ve been flocking to the noodle shop ever since it opened in September. The spot — the former Johnny’s Ham King — is packing them in for bowls of noodles topped with pork belly, confit chicken, and tofu with seaweed salad, washed down with Sapporo on tap or the house sake, all served by enthusiastic staffers in bright red T-shirts. 2601 W.
