Cocktail Recipe: Violet Eyes

Pinky’s Rooftop restaurant and bar makes the drink of the season

Atop Royal Oak’s popular Diamonds Steak & Seafood is a pink-on-pink establishment — the space’s walls, awnings, and décor are coated in the rosy hue — fittingly known as Pinky’s Rooftop. The restaurant and adjoining outdoor bar, which opened in April, take inspiration from a long-gone Detroit speakeasy known as Pinky’s Boulevard Club. The new Pinky’s maintains those yesteryear vibes among breezy new digs: antique mirrors flank a state-of-the art bar and strands of rhinestones are draped beneath industrial beams. It’s an elegant summer spot for this elegant summer drink, which Pinky’s beverage director Ryan McLean is calling Violet Eyes. “The vision was to create a perfect rooftop cocktail,” he says of the drink, which has notes of lavender, raspberry, and lemon, “It’s a refreshing outdoor sipper with the smells and flavors of everything you get in your backyard garden.” That’s a fresh cut.

Ingredients

1 ½ oz. Valentine’s White

Blossom Vodka

½ oz. Creme Yvette

5 raspberries, muddled

1 pinch lavender, muddled

½ oz. lemon juice

½ oz. simple syrup

Directions

Add all ingredients to a shaker and shake vigorously until well combined.

Fine strain the drink into a coupe glass and enjoy.
