I‘ve always had a love for the avocado. The smooth texture, bright-green color, and, of course, the taste. There are so many things you can do with an avocado, from making facial masks to whipping up a bowl of guacamole. They also contain heart healthy fats, which are excellent for your health.
Due to my love for this great fruit, I wanted to create a new way to enjoy it. That’s when I created my Avocado Boats. This a great recipe to get back on track to eating more healthy if you’ve lost your way. – Franchelle Jackson
Avocado Boats
Ingredients
1/2 teaspoon sweet basil
1/2 teaspoon table salt
1/2 teaspoon cracked black pepper
6 cherry tomatoes
1 avocado
3 tablespoons olive oil
Feta cheese
Directions
In a small mixing bowl, mix 1/2 teaspoon of sweet basil, table salt, and cracked black pepper. (You will use half on the tomatoes & half on the avocado.)
Take the cherry tomatoes, cut them in half vertically and generously season them with your mixture.
With a sharp knife, cut your avocado vertically down the middle.
After you’ve made the cut, twist each side to separate. To remove seed, take the sharp end of the knife, hit and twist down on the seed.
Next, season the avocado with the remaining of the mixture. In a preheated skillet on medium heat, drizzle 3 tablespoons of olive oil, then add the cherry tomatoes.
Allow to sauté long enough until they become tender. Once your tomatoes are sautéed, place them in the avocado along with the with feta cheese.
With the leftover olive oil from the skillet, drizzle on top of the avocado to savor all those flavors!
