In fact, his talent for choosing appropriate dinner wine was one of his responsibilities as a board member of a worldwide corporation. At one such dinner, Ed, a new member, asked Humphries to surprise him with a great wine. When the wine — a merlot — was served, Ed was exceedingly impressed and told Humphries, “From now on, always order the merlot.” “And from now on,” Humphries replied, “you’re Eddie Merlot.” To this day, that’s what Ed’s fellow board members call him.

It all starts with U.S.D.A. Prime beef. Only 2 percent of all U.S. beef is awarded this superior certification. Eddie Merlot’s offers outstanding cuts such as the 32-oz. Tomahawk, Wylarah MS9+ 5-oz. and 7-oz. filet mignon, and the Greg Norman Wagyu MS7+ New York strip, and it’s the only steakhouse in the United States to offer Wylarah Wagyu and Greg Norman 20-oz. bone-in strip. These are truly unique steaks!
Beef is aged naturally for a minimum of 21 days, to an unparalleled standard of tenderness and flavor. The chef then personally selects each piece for the optimum proportion of marbling and texture before hand-cutting and seasoning the thick, tender, and juicy steaks to your specifications. Then, to seal in the flavor, the steak is flash-seared on special high-heat grills. Eddie Merlot’s is a 100-percent scratch kitchen, to ensure every item on the menu is made with the freshest ingredients and prepared daily.
Eddie Merlot’s extensive wine list currently offers 256 selections. Their national beverage director and beverage managers across all 13 locations are passionate about selecting the best possible wines and guiding guests to the perfect selection to pair with their meal.

Eddie Merlot’s Bloomfield Hills location opened in 2013 at the corner of Big Beaver and Woodward Avenue. Each of the restaurant’s 13 locations is open seven days a week and is available for private dining events — serving breakfast, lunch, and dinner parties. The Bloomfield Hills restaurant has three beautiful private dining rooms adorned with custom-made artwork unique to that location. Its Merlot Room can accommodate up to 80 seated guests or 125 for a reception, and the Chardonnay and Cabernet rooms can accommodate up to 40 seated or 65 for a reception. Semi-private areas include the main dining room, which can accommodate up to 140 seated guests for dinner or 175 for a reception. The entire restaurant can host 400 people for a seated dinner or 600 for a reception. The Gallery, located behind the bar area and right next to the glass wine wall, can accommodate 40 for a seated dinner or 60 for a reception.
