Genevieve Vang, the chef behind longtime local Thai cuisine staple Bangkok 96, is opening a new place for all things sushi at Detroit Shipping Co. in Detroit’s Cass Corridor.
Sushi Lounge will feature an entirely gluten-free menu, with tamari instead of soy sauce (which traditionally contains wheat) and gluten-free tempura batter, the restaurant announced in a press release.
Vang has dedicated herself to creating dietary-inclusive recipes following a diagnosis of gluten intolerance and a dairy allergy, according to her website.
Diners can expect classic rolls, along with cheeky Detroit-themed creations like the Whatuproll! (fried crab, cucumber, roasted red pepper, asparagus, avocado, and Fresno chili) and the Big Three Roll (fried lobster, shrimp tempura, torched scallop, avocado, pickled daikon, and scallions).
Vegan and vegetarian options will be available, and other menu selections will include a daily chef’s nigiri, as well as red and green onigiri. For those with a sweet tooth, expect ube ice cream and green tea mochi. In conjunction with Sushi Lounge’s debut, the bar at Detroit Shipping Co. will introduce new sakes to its menu.
Those who frequent Detroit Shipping Co. — Midtown’s food hall made from repurposed shipping crates — may be familiar with Vang’s other street food stall there, Bangkok 96, or its flagship restaurant located in Dearborn. Vang also runs a retail line called Thai Feast, with several products that can be found on shelves at major grocery stores like Meijer.
Vang, who was recognized as a James Beard semifinalist in 2019, hired Chef Jasmine White (Maru Sushi, Experience Zuzu) to lead the kitchen at Sushi Lounge.
“I see Jasmine fight, her passion, her love for sushi,” Vang said in a statement. “All my life in kitchens, people underestimate me because I am a woman. I see myself in her, and I believe she deserves this chance to show Detroit what she can do.”
After a soft opening at 12 p.m. on Sept. 3, Sushi Lounge will host a grand opening on Saturday, Sept. 6 at 12 p.m., followed by a 1 p.m. ribbon-cutting ceremony and live DJ.
