Opened last fall, Union Assembly is the latest concept from local restaurant group Union Joints. Here, the eatery shares the recipe for its Simone Collins cocktail, a refreshing gin-based drink.
Union Assmebly’s Simone Collins Cocktail Recipe
Ingredients
1 oz. Pimm’s No. 1
1 oz. Beefeater Gin
3/4 oz. fresh lemon juice
1/2 oz. apricot rosemary syrup
1/4 oz. ginger syrup
Directions
Add all the ingredients in a shaker with 1 or 2 small ice cubes. Shake until the ice is gone. Pour over cubed ice in a Collins glass and add a splash of soda.
Garnish with a rosemary sprig and an orchid. Serve.
