Vegan Chocolate Cake Recipe

Wet Ingredients
2 Cups Sugar
1 Cup Canola Oil
2 tsp Vanilla
2 Cups Coffee (The darker the better)

Dry Ingredients
2 Tbsp Ground Flaxseed
2/3 Cup Cocoa Powder (Dark chocolate)
2 2/3 Cup Flour (unbleached)
2 tsp Baking soda
1 tsp Salt

Directions:
Set the oven to 350 Farenheit.
Oil and flour a bundt cake pan. Sift the dry ingredients into a medium size bowl and whisk gently to ensure they are evenly spread. Combine the wet ingredients in a large bowl and blend. Be mindful to blend on high until the oil and coffee (water) are well integrated. This may take a few minutes.

Slowly whisk the dry ingredients into the wet ingredients. Go slow enough to prevent clumping.

Pour cake batter into the bundt cake pan carefully (avoid getting it on the middle – that will bake/burn dry and be icky).

Bake on top rack of oven for 40 minutes. Check with a long toothpick (kebab skewer or chopsticks work great too) and remove from oven when toothpick comes out clean. Rest the cake for 10 minutes. Use a baking pad to protect your counter. Make the frosting (if desired) while the cake rests. Cover the open face of the bundt pan with a cake round or platter. Invert the round/platter and let the cake sit for a few minutes (let gravity bring the cake down, don’t force it). Carefully remove the bundt pan from the cake and let it cool completely. Frost, if desired, or serve!

Frosting

Ingredients:
1 Stick Earth Balance (vegan butter) at room temperature.
(up to) 3 cups Powdered Sugar
1 1/2 tps Vanilla
(up to) 2 Tbsp Vanilla flavored almond milk.

Directions:
Cream the softened butter with a hand mixer, approximately 1 minute on medium speed. Carefully fold in one cup of powdered sugar.

Add the vanilla and 1 Tbsp of almond milk. Blend with the mixer on medium speed. Be mindful not to create a cloud of powdered sugar. Add more powdered sugar, 1/2 cup at a time, until the frosting reaches the desired consistency.

For the bundt cake it’s best to have a slightly runny frosting that will drip down the side for appealing visuals.

If desired, sprinkle dairy-free chocolate chips or crushed walnuts over the frosting.
